Can you believe it’s already December?! The tree is up and holiday plans are being made with family and friends. While we’re preparing our homes for all the holiday traffic let’s not forget about celebrating with your work family as well. The office potluck is only a week or two away and you’re probably worried if you’ll even have time to make your favorite dish. Remember to make your next gathering fun by preparing easy to make yummy treats that your work buddies will talk about for weeks and months to come. Looking for the best potluck recipes to bring to work? Well, you’ve come to the right place, we gathered our team to share some of their quick and easy office potluck recipes that are sure to keep the crowd coming back for more.


Tina’s Potluck Recipe

Brie and Butter

What you’ll need:

1 lb. butter room temperature

1lb Brie room temperature including the white coating

1 small Shallot finely chopped

1 loaf of Pumpernickel bread sliced in small pieces (should be able to find cocktail slices this time of year).

Optional can serve fresh cranberry sauce or apricot preserve (warmed and strain to remove large pieces).

What to Do:

Mix first 3 ingredients together (using your hands works best) when mixed form into a ball.

Place on serving tray with slices of bread and optional fruit choices on sided. Can be made ahead and refrigerated, remove from refrigerator at least 1 hour before serving. This dish needs to be served at room temperature.

 Serve with hot spiced apple cider or warm spiced red wine.

What you’ll need:

2 parts Love

1 part understanding

What to do:

Mix together love, understanding, and compassion. Add faith, love, and knowledge. Cover with honesty and garnish with dreams, sincerity, patience, hard work, and respect for others.

Kirsten’s Potluck Recipe

Mini Quiche

What you’ll need:

1 refrigerated or frozen pie crust (thawed, if frozen)

1 cup (8 ounces) milk

2 large eggs

1 cup mayonnaise

1/4 cup all-purpose flour

1 cup (8 ounces) shredded Swiss cheese

1 cup (8 ounces) shredded Cheddar cheese

1 small onion, peeled, cut into large chunks

1/4 teaspoon salt

What to do:

Preheat oven to 350 degrees F. Spray cups of 4 mini-muffin tins with cooking spray.
On a floured surface, roll pie crust slightly to thin out. Using a small juice glass or shot glass, cut pie crust into circles and place in prepared muffin tins.
Place remaining ingredients in a blender and mix until well combined. Pour egg mixture into muffin tins until almost full then bake 20 to 25 minutes, or until lightly browned.

Classic Broccoli and Mushroom Casserole

“I got this recipe from the food network site. I thought it would be nice to try something new for the holidays and it was a hit! I also added fresh spinach and more cheese for added flavor. Thanks to all the great cooks of the world who share their talents with us.”


What you’ll need:

3 tablespoons butter, plus extra for casserole dish

2 tablespoons all-purpose flour

1/2 pound shiitake or baby bella mushrooms, sliced

1/4 cup onions, chopped

2 cloves garlic, finely chopped

1/2 teaspoon garlic powder

1/2 teaspoon cayenne pepper

1 1/2 cups heavy cream

1/2 cup chicken stock

1 (10-ounce) box frozen chopped broccoli, thawed and drained

2 cups shredded Cheddar-Monterey blend

3 cups cooked rice

Salt and freshly ground black pepper

Special equipment: 1 1/8-quart oval

What to do:

Preheat oven to 425 degrees F.

Butter casserole dish. In a large pot, melt 3 tablespoons butter and flour over medium heat until golden in color to make a quick roux. The roux should resemble the color of peanut butter. Add mushrooms, onion, garlic, garlic powder, cayenne pepper, heavy cream and chicken stock. Add broccoli, 1 cup of the cheese and rice. Season with salt and pepper, to taste. Pour into buttered dish and top with remaining shredded Cheddar. Bake until cheese is melted and golden, about 20 minutes.

Melissa’s Potluck Recipe

Crock Pot Buffalo Chicken Dip

“I’m not much of a cooker, but when my cousin introduced me to this chicken dip I had to learn how to make it for office potlucks. I was tired of bringing store bought cookies or pizza to work events, lol.”


What you need:

2½ C cooked, shredded chicken (rotisserie chicken works well)

½ C hot sauce

8 oz ⅓ of the fat cream cheese

½ C ranch dressing, homemade or store bought

½ C cheddar cheese shredded

½ C feta or blue cheese crumbles

What to do:

Stir together all ingredients until well-combined in a crock pot. 

Cook on low for 1½ hours or until cheese is melted and dip starts to bubble on edges. Stir occasionally to ensure even cooking.

Serve with your favorite chips, crackers, and veggies.
